Well, as you may know, the reason the grenades never exploded on film because when they were put into the hands of the hostages, the pins were pulled but they were holding the spoons (nicknamed spoon for it's size and shape, it is actually called a safety handle or lever). The spoon is a lever that triggers the fuse, which burns away and triggers the explosive charge contained in the body of the grenade. Unless the spoon is released, the grenade will never go off. So, as long as the hostages hold the spoon in place, the grenades are primed but inactive. Since it is impossible for the pins to be reinserted, it is likely that the Gotham PSBD (Public Safety Bomb Disposal) took the grenades, taped the spoons to the bodies of the grenades, then took them and detonated them in a containment vessel. Easy as pie for steady hands.
